A love letter to Sandwiches
As a true French… I love bread.
I could probably live on bread and cheese alone.
Which makes me very lucky to have moved to a city that also takes bread — and carbs in general — very seriously.
My favourite comfort lunch will always be a sandwich.
And I like all kinds of sandwiches.
Japanese sando. French baguette. Italian focaccia.
Hot and grilled with melting cheese. Soft pain de mie filled with vegetables.
A sandwich is a canvas.
It’s a game of texture.
Crispy and soft. Fresh and creamy. Acid and fat.
You get a bit of everything in every bite — and that’s what makes the perfect bite.
It’s not picnic season yet.
But that doesn’t mean we can’t treat sandwiches like a plan.
I’ve spent a lot of time testing, trying, and gathering my ultimate favourites.
And no — we’re not talking burgers or bagels today.
This is strictly sandwich territory.

Fifty Shades of Sandwiches
A sandwich is probably the most versatile meal you can have in a city like Copenhagen.
You can eat it on the go, on a bench, at your desk, or stretched across a table with friends. It works for a rushed weekday, a slow lunch, a post-run refuel or a solo break in between two meetings.
Same format. Infinite options.
The only real question is: where do you go when you want a place that actually takes it seriously?
Abrikos — The Spicy Cucumber
My favourite of the moment is the Spicy Cucumber at Abrikos. Don’t mistake it for boring just because the main ingredient is cucumber — it’s genuinely filled with texture and flavour. I even heard they tried several times to remove it from the menu and had people asking for it back.
Fromage frais maison, lots of fresh cucumber, fermented green chili, fresh basil, lemon zest and extra virgin olive oil.
It’s the perfect example of bread-to-garniture ratio: the softness of the organic freshly baked pain de mie balancing the freshness and slight heat of the filling. It’s simple, but not boring. Which is much harder to achieve than it sounds.
Harlo & Meyer — The Funga Focaccia
Really messy to eat. Really juicy. Really hard to eat properly. And you will not regret it.
Juicy sourdough focaccia made with Danish organic Mariagertoba wheat and whole-grain rye, filled with sautéed mushrooms (also available with slow-cooked pork), apple compote with softly caraway-spiced cabbage, roasted celeriac, winter spinach and coarse mustard mayonnaise.
It’s layered, generous and unapologetic.
Bocca — Parmigiana Sandwich
New in town in the deli category, and the opening of this parmigiana sandwich is still haunting me.
Melanzane, parmesan, rucola and basil layered inside a fine and crunchy focaccia. Nothing revolutionary on paper — but executed in a way that makes you think about it days later.
Aurens Deli — The Daily One
Aurens is the deli master of daily surprises. The sandwich changes regularly — sometimes focaccia, sometimes more bread-forward — and they partner with names like Rondo or Juno.
Mortadella, stracciatella, sweet pistachio paste, seasonal ingredients. Always fresh. Always thoughtful. You show up and trust them.
Dallas — Mushroom Toast / Kimchi & Cheddar
This sandwich is hot. In every sense.
More on the porn-food and grilled-cheese category, which makes it perfect comfort food. Thick sourdough, properly toasted, melting cheese, bold flavours. The kind of sandwich that requires napkins and no shame.
DoomsDay Deli — Roasted Aubergine
If you’re in the mood for something filthy and overloaded, this is it. It’s very much in the grilled toastie category: 90% garniture, 10% bread, 100% flavour.
Oven roasted aubergine glazed with a tomato and miso paste, cilantro vegan mayonnaise, pickled red onion, ruccola and house made chilli crunch oil served fresh on white bread.
Not subtle. Very satisfying.
BEC — Bacon Egg & Cheese Toastie
What could get you out of bed better than this?
Longest cheese pulls of this selection. Probably the nastiest one — in the best possible way. It’s also the one that travels the most: they regularly partner and do pop-ups in Paris, Berlin and even Kyoto.
It’s a cult classic for a reason.
Hero Deli — NYC Energy in a Baguette
Hero Deli is the proper definition of what a sandwich should be.
Wrapped in white paper with the flashy red logo all over, NYC-style fillings inside a baguette with a fine and crunchy crust. Meatballs, chicken in vodka sauce, generous sauces, big flavours.
You will not still be hungry after finishing one. And the vibe is naturally cool.
Goose - Chinese-Profile Sando (No Crust, Very Fluffy)
Ultra-fluffy sando bread with no crust, filled with a strong traditional Chinese flavour profile like with the Wonton pork patty sandwiched between soft milk bread with Chunky Jiang & Gewpie mayo.
FÆRM x La Posata
The collaboration between FÆRM — the “made from plant” spreadable produce in Islands Brygge — and La Posata, specialised in focaccia.
FÆRM Original, roasted organic walnuts, grilled zucchini, pomodoro and lemon zest.
This one is a february limited edition but La Posata will surely have other satisfying options to try.
Sloppy Jos — Fully Plant-Based
Sloppy Jos recently opened a deli on Jægersborggade and is fully plant-based. I haven’t tried it yet, but the cut of their creations is mouthwatering whatever your diet is.
Sandwiches don’t need meat to look (and taste) indulgent.

City Crumbs
New Openings
- Atlas Bagel
I’ll probably make a full edition dedicated to bagels soon, but there’s a new spot in town to enjoy a freshly baked open bagel with salmon & cream cheese, capers & dill. The place is called Atlas and it looks really promising.
- A Matcha Space
In recent openings, there’s also a matcha space that clearly wants to compete with the love coffee gets here — proposing quality drinks made with ceremonial matcha from @20four_matcha.
They recently did a collab with Folk Kombucha for a limited matcha kombucha.
- Alexandra Hus
Not opened yet, but I already love the branding.
Alexandra Hus is coming back in the same spirit as the old antique Alexandra Hus — cinema, performance hall, nightclub and bar — reimagined for today.
Hot Cross Buns for Easter
We’re getting closer to Easter — which is again a very good reason to treat yourself.
Everyone thinks chocolate. Not many think Hot Cross Buns. Meanwhile, those little brioches deserve more attention.
If you’re searching for them, go to Tir Bageri — they prepare fresh batches until Easter.
Ramadan Sweets
For those observing Ramadan, Harlo & Meyer prepared a special layered cake:
Date, kadayif, pistachio, white chocolate, tahini ganache & black sesame.
